Classic South African Milk Tart (Melktert)

Method
 

  1. Classic South African Milk Tart (Melktert)
    A silky-smooth, creamy milk tart with a crisp pastry base and a generous dusting of cinnamon. Perfect with a cup of tea or coffee. Inspired by the traditional South African favourite.
    Serves: 8–10
    🛒 Ingredients
    Pastry
    250 g cake flour
    125 g cold butter, cubed
    50 g castor sugar
    1 egg
    Pinch of salt
    Filling
    1 litre full-cream milk
    2 tbsp butter
    1 cinnamon stick (optional)
    ¾ cup sugar
    3 large eggs, separated
    ¼ cup cake flour
    ¼ cup cornflour
    1 tsp BlixSam Vanilla Flavouring
    ½ tsp BlixSam Caramel Flavouring
    Pinch of salt
    To Finish
    Ground cinnamon
    👨‍🍳 Method
    1. Make the Pastry
    1. Mix the flour, sugar and salt.
    2. Rub in the butter until crumbly.
    3. Add the egg and mix into a soft dough.
    4. Chill for 30 minutes.
    5. Roll out and line a 23 cm tart tin.
    6. Blind bake at 180°C for 15–20 minutes until lightly golden.
    2. Prepare the Filling
    1. Heat the milk, butter and cinnamon stick until just below boiling.
    2. Remove the cinnamon stick.
    3. Whisk together the sugar, flour, cornflour, salt, egg yolks, BlixSam Vanilla Flavouring and BlixSam Caramel Flavouring.
    4. Slowly whisk in the hot milk.
    5. Return to the saucepan and cook over medium heat, stirring constantly until thick.
    6. Beat the egg whites until soft peaks form and gently fold them into the warm custard.
    3. Assemble
    1. Pour the filling into the baked pastry shell.
    2. Smooth the top.
    3. Dust generously with ground cinnamon.
    4. Allow to cool completely, then refrigerate for at least 3 hours before serving.
    💡 BlixSam Tip
    For an extra luxurious milk tart, replace 125 ml of the milk with fresh cream for an even richer, silkier filling.
