Air Fryer Sticky Pork Belly & Baby Potatoes

Method
 

  1. Air Fryer Sticky Pork Belly & Baby Potatoes
    Slow-cooked until meltingly tender, then finished with beautifully crisp crackling and a sticky BBQ glaze. A complete family meal made entirely in the air fryer.
    Serves: 4–6
    🛒 Ingredients
    1.2–1.5 kg pork belly
    800 g baby potatoes, halved
    1 large onion, sliced
    1 red pepper, sliced
    2 tbsp butter
    1 cup chicken stock
    2 tsp BlixSam Steakhouse Premium Spice
    2 tsp BlixSam Smoke Craft Spice
    ½ cup BlixSam Yanky BBQ Sauce
    Fresh parsley, chopped (optional)
    👨‍🍳 Method
    1. Prepare the Pork Belly
    Pat the pork belly skin completely dry and score the skin without cutting into the meat.
    Rub the meat (not the skin) with:
    2 tsp BlixSam Steakhouse Premium Spice
    2 tsp BlixSam Smoke Craft Spice
    Lightly rub the skin with a little oil and season generously with fine salt.
    2. Build the Flavour Base
    Place the butter, onion and red pepper into an oven-safe dish that fits your air fryer.
    Air fry at 180°C for 8–10 minutes, stirring once, until the onions have softened.
    3. Add the Potatoes
    Add the baby potatoes and toss them through the buttery onion mixture.
    Place the pork belly on top, skin facing up.
    Pour 1 cup chicken stock into the dish, taking care not to wet the skin.
    Cover the dish tightly with foil, leaving the skin exposed if possible.
    4. Slow Cook
    Air fry at 170°C for 70–80 minutes, until the pork is tender.
    5. Crisp & Glaze
    Remove the foil.
    Brush only the meat (not the crackling) with BlixSam Yanky BBQ Sauce.
    Increase the temperature to 200°C and cook for a further 15–20 minutes, until the skin is crisp and the BBQ glaze is sticky and caramelised.
    6. Serve
    Allow the pork belly to rest for 10 minutes before slicing.
    Serve with the roasted baby potatoes and vegetables, spooning the rich cooking juices over the potatoes.

    Keeping the pork covered while it slowly cooks makes it exceptionally tender. Removing the foil only for the final browning gives you the perfect combination of juicy pork, crispy crackling, sticky BBQ glaze and flavour-packed potatoes.
