Smoky Stuffed Bell Peppers

Tender bell peppers stuffed with a rich, smoky beef and rice filling, baked in a savoury tomato sauce and topped with bubbling melted cheese. BlixSam Smoke Craft gives this classic family favourite an irresistible smokehouse flavour.
Serves: 4–6

Ingredients

  • 4 large bell peppers (any colour)
  • 2 tbsp olive oil
  • 500 g lean beef mince
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 tbsp BlixSam Smoke Craft
  • 1 tsp BlixSam Pasta a la Sam
  • 1 cup cooked rice
  • 1 × 400 g tin chopped tomatoes
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 cup grated cheddar cheese
  • ½ cup grated mozzarella
  • Fresh parsley, chopped

Method

  1. Preheat the oven to 190°C.
  2. Slice the tops off the peppers and remove the seeds.
  3. Heat the olive oil in a frying pan and brown the beef mince.
  4. Add the onion and garlic and cook until softened.
  5. Stir in the BlixSam Smoke Craft, BlixSam Pasta a la Sam, tomato paste and Worcestershire sauce.
  6. Add the chopped tomatoes and simmer for 8–10 minutes.
  7. Stir in the cooked rice and mix well.
  8. Place the peppers into a baking dish and fill them generously with the beef mixture.
  9. Top with the cheddar and mozzarella.
  10. Cover with foil and bake for 30 minutes.
  11. Remove the foil and bake for another 10–15 minutes, until the cheese is golden and bubbling.
  12. Garnish with fresh parsley and serve hot.

  • Roasted vegetables
  • Buttered corn
  • Creamy coleslaw

Brush the peppers lightly with olive oil and sprinkle a little extra BlixSam Smoke Craft over the tops before baking for an even richer smoky flavour.
