BBQ Boerewors Pasta

Ingredients

  • 500 g penne or fusilli pasta
  • 500 g boerewors
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, crushed
  • 2 tsp BlixSam Grill Forge
  • 2 tsp BlixSam Pasta Mio
  • 150 ml BlixSam Yanky BBQ Sauce
  • 2 tbsp tomato paste
  • 250 ml fresh cream
  • 150 g cream cheese
  • 200 g mature cheddar cheese, grated
  • 100 g mozzarella cheese, grated
  • 2 spring onions, finely sliced
  • Freshly ground black pepper

Method

  1. Cook the pasta until al dente according to the packet instructions. Drain and set aside.
  2. Braai or pan-fry the boerewors until cooked through and lightly charred. Slice into bite-sized pieces.
  3. Heat the olive oil in a large frying pan over medium heat.
  4. Fry the onion until soft, then add the garlic and cook for 1 minute.
  5. Stir in the BlixSam Grill Forge and Pasta Mio, allowing the spices to bloom in the oil for 30 seconds.
  6. Add the tomato paste and BlixSam Yanky BBQ Sauce, stirring well.
  7. Pour in the fresh cream and stir in the cream cheese until smooth and creamy.
  8. Add the sliced boerewors and simmer for 3–4 minutes.
  9. Fold in the cooked pasta and mix until evenly coated.
  10. Stir through half of the cheddar cheese.
  11. Sprinkle over the remaining cheddar and the mozzarella, then cover with a lid for 3–5 minutes or place under a hot grill until the cheese is melted and bubbling.
  12. Garnish with spring onions and freshly ground black pepper before serving.
