Breakfast Pap Bowls

Cooking: 25–30 minutes Creamy cheesy pap topped with crispy bacon, sizzling boerewors, a golden fried egg and fresh tomato relish. A proper South African breakfast turned into one seriously lekker bowl.
Ingredients
Cheesy Pap- 1½ cups maize meal
- 4 cups water
- ½ tsp salt
- 40 g butter
- 1 cup grated cheddar
- ¼ cup cream
- 300 g boerewors
- 200 g streaky bacon
- 4 large eggs
- 1 tbsp BlixSam Brêckie
- 1 cup grated cheddar
- 2 spring onions, sliced
- Fresh parsley, chopped
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 ripe tomatoes, diced
- 1 tsp brown sugar
- 1 tsp Worcestershire sauce
- Black pepper, to taste
Method
- Heat a frying pan over medium-high heat and cook the boerewors until browned and cooked through. Slice into bite-sized pieces.
- Fry the bacon until crispy. Remove and roughly chop.
- In the same pan, fry the eggs, keeping the yolks soft and golden.
- For the relish, sauté the onion in olive oil until softened. Add the tomatoes, brown sugar, Worcestershire sauce and black pepper.
- Cook for 8–10 minutes until thick and slightly jammy.
- Bring the water and salt to a boil. Gradually whisk in the maize meal.
- Reduce the heat and cook until the pap is smooth and cooked through.
- Stir in the butter, cheddar and cream until rich and creamy.
- Stir ½ tbsp BlixSam Brêckie through the hot pap.
- Divide the cheesy pap between four bowls.
- Spoon tomato relish over one side, then add sliced boerewors and crispy bacon.
- Top each bowl with a fried egg and grated cheddar.
- Finish with the remaining BlixSam Brêckie, spring onions and parsley.
