Tender pork strips and sweet caramelised onions seasoned with BlixSam Dop ’n Tjop, then coated in a rich, sticky Smoke Craft Smoky Sweet BBQ Sauce glaze. Quick, smoky and seriously lekker. Serves: 4Prep: 15 minutes
Cook: 20–25 minutes
Ingredients
- 700 g pork loin or pork fillet, sliced into strips
- 2 tbsp cooking oil
- 2 tsp BlixSam Dop ’n Tjop
- 2 large onions, sliced into thick rings or wedges
- 2 cloves garlic, finely chopped
- ¾ cup BlixSam Smoke Craft Smoky Sweet BBQ Sauce
- 2 tbsp water
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar or honey, optional for extra stickiness
- 1 tbsp butter
- 2 spring onions, sliced, for serving
- Freshly ground black pepper to taste
Method
- Season the pork: Toss the pork strips thoroughly with Dop ’n Tjop.
- Sear: Heat 1 tbsp oil in a large skillet over high heat. Add the pork in batches and sear until beautifully browned. Don’t overcrowd the pan. Remove and set aside.
- Caramelise the onions: Reduce to medium heat and add the remaining oil. Add the onions and cook for 8–10 minutes, stirring occasionally, until soft, golden and caramelised.
- Add the garlic: Stir in the garlic and cook for another 30 seconds.
- Make it sticky: Add Smoke Craft Sauce, water, Worcestershire sauce and optional brown sugar or honey. Stir and bring to a gentle simmer.
- Glaze the pork: Return the pork and any juices to the skillet. Toss everything together and cook uncovered for 3–5 minutes, until the sauce reduces into a thick, glossy glaze that clings to the pork and onions.
- Finish: Stir through the butter for an extra-rich, glossy finish. Add black pepper and scatter over the spring onions.
