👨‍🍳 Method – Layered the BlixSam Way
    1️⃣ Bloom the flavour foundation
Heat the oil in a heavy pot over medium heat.
    Add:
    Cumin seeds
    Curry leaves
    Bay leaves
    Cardamom
Cook for about 30 seconds until fragrant.
Add the BlixSam Bazaar Kerrie, BlixSam Piets-my-nou, BlixSam Arm Maat and ground cumin directly into the oil.
Let the spices bloom for another 30 seconds—this is Sam's signature move for deep, layered flavour.
    2️⃣ Build the curry base
Add the onions and cook until soft and golden.
Stir in the ginger and garlic and cook for 1 minute.
Add the tomato paste and cook briefly before stirring in the canned tomatoes.
Simmer for 8–10 minutes until the sauce becomes rich and glossy.
    3️⃣ Brown the lamb
Add the lamb cubes and stir well until every piece is coated in the fragrant curry mixture.
Cook for 8–10 minutes until lightly browned.
    4️⃣ Slow cook
Pour in the stock and bring to a gentle simmer.
Cover and cook over low heat for 1½–2 hours, stirring occasionally, until the lamb becomes tender.
    5️⃣ Add the potatoes
Add the potato chunks and continue cooking for 25–30 minutes until the potatoes are soft and the curry has thickened into a rich gravy.
Season with salt and black pepper to taste.
    Finish with freshly chopped coriander.
    6️⃣ Build the Bunny Chow
Cut a thick loaf of bread into quarters.
Hollow out the centre, leaving sturdy walls to hold the curry.
Fill generously with the hot lamb curry, making sure each serving gets plenty of tender lamb, potatoes and rich gravy.
    Garnish with fresh coriander.
Serve immediately with a small bowl of fresh sambals on the side.
