Ingredients
Nach-O-Average Chicken- 8 chicken thighs and/or drumsticks
- 2 tbsp oil
- 2 tsp BlixSam Crunch Craft
- 1 tsp BlixSam Garlic Melt
- ½ tsp black pepper
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 1 cup chicken stock
- ½ cup Nach-O-Average Under Fire Sauce
- ½ cup fresh cream
- ½ cup grated cheddar
- 1 tbsp butter
- 2 tbsp oil
- 1 onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 2 carrots, coarsely grated
- 1 cup sweetcorn, drained
- 2 garlic cloves, crushed
- 2 tbsp tomato paste
- 1 tin (400 g) chopped tomatoes
- ½ cup Nach-O-Average Under Fire Sauce
- ½ tsp BlixSam Garlic Melt
- ¾ cup grated cheddar
- Fresh parsley or spring onion, chopped
- 2 cups maize meal
- 5–6 cups water, depending on preferred consistency
- 1 tsp salt
- 1 tbsp butter
Method
- Season the chicken: Pat the chicken dry and season generously with Crunch Craft, Garlic Melt and black pepper.
- Brown the chicken: Heat the oil in a large heavy pan. Brown the chicken for 3–4 minutes per side until deeply golden. Remove and set aside.
- Start the gravy: Add the sliced onion to the same pan and cook for about 5 minutes until soft and golden. Add the garlic and cook for another 30 seconds.
- Pour in the chicken stock and scrape all the browned bits from the bottom of the pan. Stir in the Nach-O-Average Under Fire Sauce.
- Return the chicken to the pan. Cover and simmer gently for 20–25 minutes, or until completely cooked and tender.
- Reduce the heat and stir in the cream. Add the cheddar gradually and stir until melted into a smooth, creamy, cheesy gravy. Finish with the butter.
- Make the chakalaka: Heat the oil in a separate pan. Fry the onion, peppers and carrots for 5–6 minutes. Add the garlic, tomato paste and Garlic Melt and cook for another minute.
- Add the chopped tomatoes, sweetcorn and Nach-O-Average Under Fire Sauce. Simmer uncovered for 10–15 minutes until thick and chunky.
- Reduce the heat and stir the grated cheddar through the chakalaka until just melted. You want it cheesy and saucy, not completely smooth.
- Make the pap: Bring the water and salt to a boil. Gradually add the maize meal while stirring. Reduce the heat, cover and cook gently until smooth and soft. Stir through the butter.
- Serve: Spoon the soft pap onto each plate. Add the golden chicken and pour plenty of creamy Nach-O-Average gravy over the pap. Add a generous helping of the cheesy tomato, pepper and sweetcorn chakalaka alongside.
