Sweet, smoky and beautifully charred! Fresh corn is cut into ribs, seasoned with BlixSam Fire Wave, brushed with BlixSam Smoke Craft Sauce, then finished with a cool, creamy lime dressing. Serves: 4Prep: 15 minutes
Cook: 15–20 minutes
Ingredients
Corn Ribs- 4 fresh corn cobs
- 2 tbsp oil
- 2 tsp BlixSam Fire Wave
- ½ tsp salt
- ¼ tsp black pepper
- 5 tbsp BlixSam Smoke Craft Sauce
- 1 tbsp honey
- ½ cup mayonnaise
- 2 tbsp plain yoghurt or sour cream
- Juice of 1 lime
- 1 tsp finely grated lime zest
- 1 small garlic clove, finely grated
- Salt and black pepper to taste
- Fresh coriander or parsley, chopped
Method
- Prepare the corn: Carefully cut each corn cob in half crosswise. Cut each half lengthways into quarters to create corn ribs.
- Season: Toss the corn ribs with the oil, Fire Wave, salt and black pepper until evenly coated.
- Char: Place the corn ribs on a hot braai or grill. Cook for about 8–10 minutes, turning regularly, until golden, lightly charred and beginning to curl.
- Make the glaze: Mix the Smoke Craft Sauce and honey together. Brush generously over the corn ribs.
- Get them sticky: Return to the heat for another 2–3 minutes, turning and brushing with more glaze until beautifully sticky and caramelised. Watch carefully because the glaze can catch quickly.
- Make the lime dressing: Mix the mayonnaise, yoghurt, lime juice, lime zest and garlic. Season with salt and black pepper.
- Finish: Pile the hot charred corn ribs onto a serving platter. Drizzle with the creamy lime dressing and scatter over fresh coriander or parsley.
