- 1 tsp BlixSam Arm Maat
- ½ tsp black pepper
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 2 tbsp tomato paste
- 1 tin (400 g) chopped tomatoes
- ½ cup chicken stock
- ½ cup V.D.M. Under Fire Sauce – Red Jalapeño
- 2 tbsp oil
- 1 onion, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 2 carrots, coarsely grated
- 2 garlic cloves, crushed
- 2 tbsp tomato paste
- 1 tin (400 g) chopped tomatoes
- 1 tin (410 g) baked beans
- ¼ cup V.D.M. Under Fire Sauce
- 1 tsp BlixSam Fire Wave
- ½ tsp BlixSam Arm Maat
- 2 cups maize meal
- 5–6 cups water
- 1 tsp salt
- 1 tbsp butter
Method
- Pat the chicken dry and season with Fire Wave, Arm Maat and black pepper.
- Heat the oil in a large heavy pan and brown the chicken for 3–4 minutes per side until deeply golden. Remove and set aside.
- Add the sliced onion to the same pan and cook until soft and lightly caramelised. Add the garlic and fry for another 30 seconds.
- Stir in the tomato paste and cook for 1 minute. Add the chopped tomatoes, chicken stock and V.D.M. Under Fire Sauce. Scrape all those browned chicken bits from the bottom of the pan into the sauce.
- Return the chicken to the pan. Cover and simmer gently for 25–30 minutes. Remove the lid and cook for another 5–10 minutes until the sauce is thick, glossy and clinging to the chicken.
- Make the chakalaka: Heat the oil in a separate pan. Fry the onion, peppers and carrots for 5–6 minutes. Add the garlic, tomato paste, Fire Wave and Arm Maat and cook for another minute.
- Add the chopped tomatoes and V.D.M. Under Fire Sauce. Simmer for 10 minutes, then stir in the baked beans and cook for another 5–10 minutes until thick and chunky.
- Make the pap: Bring the water and salt to a boil. Gradually add the maize meal while stirring. Reduce the heat, cover and cook until smooth and soft. Stir in the butter.
- Spoon the soft pap onto each plate. Add the saucy V.D.M. Red Jalapeño Chicken and spoon a generous helping of spicy chakalaka alongside.
