Smoky Beef Quesadillas

Ingredients
- 500 g beef mince
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tbsp BlixSam’s Smoke Craft Spice
- 1 tsp BlixSam’s Garlic Melt (optional)
- 1/2 tsp smoked paprika (optional)
- Salt and black pepper, to taste
- 1 cup (100 g) grated cheddar cheese
- 1 cup (100 g) grated mozzarella cheese
- 4 large flour tortillas
- Fresh coriander or parsley, chopped
- Sour cream, guacamole and salsa (for serving)
Method
- Heat the olive oil in a pan over medium heat.
- Add the onion and cook for 2–3 minutes until softened.
- Add the garlic and bell peppers. Cook for another 3–4 minutes until tender.
- Add the beef mince and cook until browned.
- Stir in the Smoke Craft, Garlic Melt, smoked paprika, salt and black pepper. Cook for another 3–4 minutes, then remove from the heat.
- Lay a tortilla flat and sprinkle one half with some of the cheese.
- Spoon a generous amount of the beef mixture over the cheese and top with a little more cheese.
- Fold the tortilla in half and press gently.
- Heat a large non-stick pan or griddle over medium heat.
- Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese has melted.
- Slice into wedges and garnish with fresh coriander.
- Serve with sour cream, guacamole and salsa.
