Smoky Beef Quesadillas

Ingredients

  • 500 g beef mince
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tbsp BlixSam's Smoke Craft Spice
  • 1 tsp BlixSam's Garlic Melt (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 1 cup (100 g) grated cheddar cheese
  • 1 cup (100 g) grated mozzarella cheese
  • 4 large flour tortillas
  • Fresh coriander or parsley, chopped
  • Sour cream, guacamole and salsa (for serving)

Method

  1. Heat the olive oil in a pan over medium heat.
  2. Add the onion and cook for 2–3 minutes until softened.
  3. Add the garlic and bell peppers. Cook for another 3–4 minutes until tender.
  4. Add the beef mince and cook until browned.
  5. Stir in the Smoke Craft, Garlic Melt, smoked paprika, salt and black pepper. Cook for another 3–4 minutes, then remove from the heat.
  6. Lay a tortilla flat and sprinkle one half with some of the cheese.
  7. Spoon a generous amount of the beef mixture over the cheese and top with a little more cheese.
  8. Fold the tortilla in half and press gently.
  9. Heat a large non-stick pan or griddle over medium heat.
  10. Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese has melted.
  11. Slice into wedges and garnish with fresh coriander.
  12. Serve with sour cream, guacamole and salsa.
