Smoky Jalapeño Poppers

Ingredients
- 12 fresh jalapeños
- 150 g cream cheese, softened
- 1 cup grated cheddar cheese
- 1/2 cup grated mozzarella cheese
- 1 clove garlic, minced
- 1 tbsp spring onion, finely chopped
- 1/2 tsp BlixSam’s Smoke Craft Spice
- 1/4 tsp BlixSam’s Garlic Melt (optional)
- Salt and black pepper, to taste
- 12 thin rashers bacon (or streaky bacon sliced in half)
- Toothpicks
Method
- Preheat the oven to 200°C and line a baking tray with foil or place a wire rack over it.
- Slice the jalapeños in half lengthways and remove the seeds and membranes for a milder heat (leave some in if you prefer them hotter).
- In a bowl, combine the cream cheese, cheddar, mozzarella, garlic, spring onion, Smoke Craft, Garlic Melt, salt and black pepper until smooth.
- Spoon or pipe the cheese mixture into each jalapeño half.
- Wrap each stuffed jalapeño with half a rasher of bacon and secure with a toothpick.
- Arrange on the prepared tray and bake for 20–25 minutes, or until the bacon is crispy and the cheese is golden and bubbling.
- Garnish with chopped parsley or spring onion and serve warm.
